Chicken Salad Snack Board Recipe


Looking for a fun way to serve lunch? I threw this Chicken Salad snack board together over the weekend and it was a total hit! My kids love it when I display food this way. I think it’s because it looks pretty, and they get to pick and choose what goes on their plate. I love it because it’s an opportunity to clean out the fridge and make a meal look fancy! Shh…I won’t tell, if you won’t tell.

In a bowl I made my favorite Chicken Salad recipe (keep reading below for the recipe).

On the board I displayed:

  • Snack Crackers
  • Apple Slices
  • Sugar Snap Peas
  • Orange Slices
  • Sliced Bell Pepper
  • Chopped Walnuts
  • Berries

Chicken Salad Recipe

  • 1 rotisserie chicken shredded (you can also sub this for 2 cans of canned chicken)
  • 1 1/2 apples peeled and chopped
  • 1 cup grapes quartered
  • 4 Tablespoons of mayo
  • 2 Tablespoons of mustard
  • salt and pepper
  • 1/2 cup chopped walnuts (optional) The kids don’t like walnuts in theirs but I love it. So I put the walnuts on the snack board so those of us who like them could add them to our chicken salad.
