Pub Cheese Recipe Inspired by The Golden Bee

Posted on February 26, 2022February 26, 2022

In Colorado Springs there is a place called the Golden Bee. It’s the famous English Pub restaurant at The Broadmoor hotel. It’s known for their sing-a-long piano player, yards of beer (yes, literal yards), and the most mouth water pub cheese spread they serve when you sit at the table. The pub cheese is the perfect thing to stuff your face with as you sing “Sweet Caroline” and try to soak up all the beer in your belly.

It’s been 11 years since we’ve lived there. They now only serve half yards of beer but the fun is still there. The Golden Bee smells of wood and booze and is filled with the sounds of old piano keys and clinking glasses. You feel like you have transported into another time when you walk in. It’s a ghostly magic that you have to experience if you are ever in that area. One morning we reminisced about how much fun The Golden Bee was. It was a place we frequently went to in the late night hours while we were dating. We started drooling just talking about the cheese spread. So naturally I began trying to recreate it…and I’m happy to say…I nailed it y’all.

If you can’t physically make it out to Colorado or you are just looking to WOW family and friends for Saint Patrick’s Day… you will want to try this Pub Style Snack Board Inspired by The Golden Bee! Let me know if you try it and tag me on Instagram!
